You Will Need:

  • ½ cup of chopped onion
  • ½ cup of chopped peppers
  • ½ cup of chopped broccoli
  • ¼Tbsp minced garlic
  • 1 ½ cups of cooked quinoa rice
  • Salt to taste
  • 1 egg
  • Olive oil

How To:

  1. Sautee the onions in oil. Add the other vegetables and cook until tender.
  2. Add the rice and season with salt.
  3. Make a little hole in the center of the rice and add the egg. Stir well to make scrambled eggs.

2. Broccoli Spaghetti:

You Will Need:

  • 1 ½ cups of broccoli
  • 1 clove garlic
  • ½ cup of fresh parsley
  • 1/3 cup of pine nuts
  • 2 Tbsp extra virgin olive oil

  • 1 packet of Spaghetti
  • Water

How To:

  1. Fill a bowl with some water and ice.

3. Cheesy Broccoli Soup With Corn:

You Will Need:

  • 3 cups of sweet corn
  • 1 chopped onion
  • 1 ½ Tbsp olive oil
  • 2 cloves garlic
  • 3 cups of unsweetened almond milk
  • 3 cups of vegetable stock
  • 1 cup of chopped broccoli florets
  • Salt and pepper to taste
  • Grated cheese
  • ½ cup of plain yogurt

How To:

  1. Preheat your oven to 400 degrees F.
  2. Place the corn in a baking dish and drizzle some oil. Add salt and pepper as per taste and roast for an hour.
  3. Sauté the onion and garlic in a pan. Add the almond milk and stock. Cook for five minutes.
  4. Now, add the broccoli and season with salt and pepper. Reduce the heat and cook the broccoli until it turns tender.
  5. Remove the pan from heat and churn the mix in a blender to get a smooth consistency.
  6. Warm the soup and add the cheese. Cook for ten minutes.

You Will Need:

  • 1 cup of chopped and cooked broccoli
  • 1 cup of all-purpose flour
  • ½ cup of oats
  • 1 Tbsp baking powder
  • ¼ Tbsp salt
  • 1 egg
  • 1/3 cup of milk
  • 2 Tbsp olive oil
  • 1 Tbsp sugar
  • 1 Tbsp Dijon mustard
  • ¼ cup of chopped green onions
  • ½ cup of grated cheese

How To:

  1. Place a rack in the middle of the oven and heat it to 400 degrees F.

  3. Mix the baking powder, flour, oats, and salt in a bowl.
  4. Mix the egg, sugar, oil, milk, and mustard in another bowl. Add the broccoli, green onions and cheese.
