  • 3 cups grated lauki (bottle gourd)
  • 3 tablespoons ghee or clarified butter
  • 2 cups full-fat milk
  • 6 tablespoons brown sugar
  • ½ teaspoon cardamom powder
  • 2 tablespoons flaked almonds

How To Prepare

Heat clarified butter and add the grated lauki.
Sauté on medium heat for 5 minutes.
Add the milk and cook till the mixture starts thickening.
Stir in the sugar and cardamom powder.
Cool and garnish with flaked almonds.

  • 1 cup grated lauki

  • 1 teaspoon carom seeds

How To Prepare

  1. Squeeze the grated lauki to drain excess water.
  2. Reserve this water for making the dough.

  • 1 cup lauki halwa
  • 1 cup full-fat milk
  • 3 tablespoons crushed pistachios
  • Sugar, if required

How to Make

  1. Boil the milk till it is 1/2 of its original volume, and then cool it.
  2. Add the milk to the cooled halwa and blend them in a blender.
  3. Sugar should be added sparingly as there is enough sugar in the halwa.
  4. Add pistachios and mix well.
  5. Freeze overnight in kulfi mould.

Ingredients

  • ½ cup split Pigeon peas or toor daal
  • 1 cup medium sized cubes of lauki
  • 1 teaspoon chopped garlic
  • ¼ cup chopped tomato
  • 1 teaspoon cumin seeds
  • 1 teaspoon chopped green chili
  • 1 dry red chili
  • ½ teaspoon turmeric
  • 2 teaspoon ghee
  • ¼ teaspoon ginger paste
  • Coriander leaves for garnishing
  • Salt to taste

How To Make

  1. Toss the lauki and toor daal in a pressure cooker.
  2. Add turmeric and salt and pressure cook until you hear 2-3 whistles.
  3. Add ghee to a heated pan.
  4. Add dry red chili, cumin seeds, garlic, and ginger. Saute for 30 seconds.
  5. Now, add the chopped tomatoes and green chili. Mash the tomatoes and cook for 2 minutes.
  6. Add this to the pressure cooked toor daal and lauki.
  7. Stir well and cook for 5 minutes.
  8. Remove from flame and garnish with coriander leaves.

5. Lauki Kofta Curry

Ingredients

  • 2 cups grated lauki
  • 2 tablespoons chopped cilantro
  • 2 teaspoons cumin powder
  • 2 teaspoons coriander powder
  • 4 teaspoons ground oatmeal
  • ½ teaspoon turmeric
  • ½ teaspoon chili powder
  • 1 teaspoon chopped green chili
  • 3 tablespoons Bengal gram flour
  • ½ cup chopped onion
  • 2 teaspoons ginger-garlic paste
  • 3 tablespoons clarified butter
  • 7 tablespoons olive oil
  • 2 cardamom
  • 1 inch cinnamon stick
  • 3 cloves
  • ½ teaspoon garam masala
  • Coriander leaves for garnish
  • Salt to taste
  • 3 tablespoons fresh cream
  • ½ cup water

How To Prepare

  1. Squeeze the lauki to drain the excess water. Toss it into a large bowl.
  2. Add 1 teaspoon coriander powder, 1 teaspoon cumin powder, Bengal gram flour, ground oatmeal, salt, and chopped green chili. Mix well and make small balls of the dough – also called the koftas.
  3. Heat the olive oil in a pan and fry the koftas.
  4. Remove from the pan and keep them aside.
  5. In the same oil, add cardamom, cloves, and cinnamon. Fry for 20 seconds.
  6. Add chopped onions and fry till they become translucent.
  7. Add the ginger-garlic paste and cook for a minute.
  8. Add the tomatoes, 1 teaspoon coriander powder, 1 teaspoon cumin powder, turmeric, chili powder, and salt. Cook till the oil starts to separate.
  9. Add water and let it come to a boil.
  10. Add the koftas and 2 tablespoons fresh cream. Cover with a lid and cook for 5 minutes.
  11. Remove from flame and add ghee, coriander leaves, and garam masala.

6. Lauki Muthia

Ingredients

  • 1 cup grated lauki
  • 1 cup grated beetroot
  • 3 tablespoons gram flour
  • 2 tablespoons wheat flour
  • ¼ teaspoon asafoetida
  • 1 tablespoon semolina
  • ½ teaspoon garam masala
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • Pinch of baking soda
  • 1 teaspoon mustard seeds
  • 3 tablespoons olive oil
  • 1 tablespoon rice bran oil
  • 10 curry leaves
  • Salt to taste

How To Prepare

  1. In a separate bowl, mix all the dry ingredients, such as gram flour, wheat flour, asafoetida, semolina, spices, 1 tablespoon rice bran oil, and a pinch of baking soda.
  2. Heat the olive oil in a pan.
  3. Mix all the ingredients together to form a dough.
  4. Let it rest for 30 minutes.
  5. Roll out into logs and place on a greased plate in a steamer.

  • ¼ teaspoon minced garlic
  • ¼ cup chopped onion
  • ¼ cup chopped tomato
  • 1 bay leaf
  • ¼ teaspoon cumin powder
  • ½ teaspoon coriander powder
  • ½ teaspoon turmeric
  • ½ teaspoon chili powder
  • 1 teaspoon ghee
  • 2 tablespoons chopped coriander
  • Salt to taste

How To Prepare

  1. Heat the oil in a pan and add cumin seeds, bay leaf, and dry red chili. Cook for 10 seconds.
  2. Add the chopped onion and fry till they become translucent.
  3. Add the ginger and garlic. Fry for 20 seconds.
  4. Add the chopped onion, cumin powder, coriander powder, chili powder, and turmeric. Cook until the oil starts to separate.
  5. Now, add the lauki and cover with a lid. Cook for 8 minutes.

Ingredients

  • 1 cup julienned lauki
  • ½ cup popcorn shrimps, veined and shelled
  • 1 bay leaf
  • 1 teaspoon cumin seeds
  • 2 dry red chilies
  • 2 tablespoons mustard oil
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • 1 teaspoon cumin powder
  • ½ teaspoon coriander powder
  • Salt to taste
  • Coriander leaves for garnishing

How To Prepare

  1. Rub half teaspoon turmeric and a little salt on the shrimps and keep them aside for 10 minutes.
  2. Heat the oil in a pan.
  3. Add bay leaf, cumin seeds, and dry red chilies. Let them crackle.
  4. Add the shrimps and fry for 1 minute.
  5. Now, add the lauki and cook for 2 minutes.
  6. If the lauki releases water, do not add more water. If not, you can put ¼ cup water. Cover with a lid and simmer for 7 minutes.
  7. Add chili powder, turmeric, cumin and coriander powder, and salt.
  8. Stir well and cook for 3 minutes more.

Ingredients

  • 1 cup grated lauki
  • 2 tablespoons gram flour
  • 2 tablespoons wheat flour
  • 1 teaspoon rice flour
  • ½ teaspoon grated ginger
  • ½ teaspoon chaat masala
  • 1 teaspoon minced green chili
  • 1 cup chopped coriander
  • 3 cloves of garlic
  • 2 tablespoons lemon juice
  • 7 tablespoons olive oil
  • Salt to taste

How To Prepare

  1. Squeeze the lauki to drain the excess water.
  2. Add gram flour, wheat flour, rice flour, ginger, chaat masala, minced green chili, and salt to the lauki. Mix well. Add water if needed.
  3. Make small balls of this mix.
  4. Heat the oil in a pan and fry them until golden brown.
  5. Blend the coriander leaves, garlic, lemon juice, and salt into a smooth paste.
  6. Serve the pakodas with coriander chutney.

  • 500 gm grated lauki
  • 1 cup gram flour
  • 2 teaspoons chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 bay leaf
  • ½ teaspoon cumin seeds
  • 1 teaspoon chopped green chili
  • Pinch of asafoetida
  • 1 ½ cup beaten curd
  • Salt to taste
  • 2 tablespoons oil
  • Chopped coriander for garnishing

How To Prepare

  1. Squeeze the excess water out and add cumin and coriander powder, chili powder, gram flour, and salt. Make a soft dough.
  2. Shape the dough into long cylinders.
  3. Place them on a sieve.
  4. Place the sieve over boiling water.
  5. Cover and cook until the gattas are cooked.
  6. Cool them and cut them into 1 inch pieces. Keep aside.
  7. Heat the oil in a pan and add asafoetida, bay leaf, and cumin seeds. Let them crackle.
  8. Add curd, turmeric, chili powder, salt, and coriander powder.
  9. Cook until the oil starts to float on top.
  10. Add the gattas and ¼ cup water.
  11. Cook until you get a thick consistency.
  12. Garnish with coriander leaves.

15. Lauki Pickle

  • 250 gm grated lauki
  • 1 cup water
  • 1 ¼ teaspoons asafoetida

  • 1 ¼ teaspoon turmeric
  • 2 tablespoon salt

How To Prepare

  1. Cook the grated lauki with a little water and salt in open flame.
  2. After it gets cooked and soft, sieve it to remove the excess water.
  3. Add all the ingredients to the lauki and keep it in the sun for 2 days.
