How To Prepare
Heat clarified butter and add the grated lauki.
Sauté on medium heat for 5 minutes.

- ½ teaspoon turmeric
- 2 teaspoon ghee
- ¼ teaspoon ginger paste

How To Make
- Toss the lauki and toor daal in a pressure cooker.
- Add turmeric and salt and pressure cook until you hear 2-3 whistles.
- Add ghee to a heated pan.
- Add dry red chili, cumin seeds, garlic, and ginger. Saute for 30 seconds.
- Now, add the chopped tomatoes and green chili. Mash the tomatoes and cook for 2 minutes.

How To Prepare
- Squeeze the lauki to drain the excess water. Toss it into a large bowl.
- Add 1 teaspoon coriander powder, 1 teaspoon cumin powder, Bengal gram flour, ground oatmeal, salt, and chopped green chili. Mix well and make small balls of the dough – also called the koftas.
- Heat the olive oil in a pan and fry the koftas.

- 1 teaspoon coriander powder
- Pinch of baking soda

- 2 dry red chilies

- 1 teaspoon cumin powder
- ½ teaspoon coriander powder

How To Prepare
- Rub half teaspoon turmeric and a little salt on the shrimps and keep them aside for 10 minutes.

- ½ teaspoon grated ginger

- 3 cloves of garlic
- 2 tablespoons lemon juice

How To Prepare
- Squeeze the lauki to drain the excess water.
- Add gram flour, wheat flour, rice flour, ginger, chaat masala, minced green chili, and salt to the lauki. Mix well. Add water if needed.

- 1 cup gram flour

- Pinch of asafoetida
- 1 ½ cup beaten curd

How To Prepare
- Squeeze the excess water out and add cumin and coriander powder, chili powder, gram flour, and salt. Make a soft dough.
- Shape the dough into long cylinders.
- Place them on a sieve.
- Place the sieve over boiling water.
- Cover and cook until the gattas are cooked.
- Cool them and cut them into 1 inch pieces. Keep aside.
- Heat the oil in a pan and add asafoetida, bay leaf, and cumin seeds. Let them crackle.
- Add curd, turmeric, chili powder, salt, and coriander powder.
- Cook until the oil starts to float on top.
- Add the gattas and ¼ cup water.

- 250 gm grated lauki
- 1 cup water
