6. Mixed-Veg Quiche:

You Will Need:

  • ½ zucchini, grated
  • 1 carrot, grated
  • 1 cup of pumpkin
  • 1 cup of grated cheese
  • ½ cup of finely chopped sweet potato
  • 3 Eggs
  • 1/3 cup of milk
  • Pepper
  • 1 teaspoon of dried herb

How To:

  1. In a mixing bowl, combine all the ingredients and place in the muffin tins.
  1. Bake for 15 minutes or until well cooked.

7. Chicken And Spinach Quiche:

You Will Need:

  • 12 eggs
  • 1 cup of organic spinach, finely chopped
  • 2 slices chicken Prosciutto, finely chopped
  • ½ cup of Parmesan cheese
  • 1 cup of grated mozzarella cheese
  • Salt and pepper to taste
  • A pinch of nutmeg per quiche

How To:

  1. Coat each tin generously with cooking spray.
  1. Crack an egg into each tin and scramble gently with a whisk.
  1. In a mixing bowl, combine all the ingredients and transfer into the muffin tins.
  1. Top it with grated cheese and bake for 10 to 12 minutes. Leave it aside for 5 minutes before serving.

8. Leek, Asparagus And Spinach Quiche:

You Will Need:

  • 1 tablespoon of leeks, chopped
  • 3 stems of asparagus, chopped
  • ½ cup of spinach, chopped
  • 2 green onions, chopped
  • 4 eggs
  • 1 egg yolk
  • ½ cup Greek yogurt
  • 1 tablespoon of bread crumbs
  • 1 cup of grated cheddar cheese
  • Pepper to taste

How To:

  1. In a medium sized bowl, whisk eggs, milk, yogurt and bread crumbs. Add pepper to taste.
  1. Put a small layer of cheese at the bottom of the pan. Then add 1 tablespoon of veggies on top of cheese.
  1. Pour the egg mixture into the cup until it is 2/3rds full.
  1. Add another layer of cheese on top of top the egg mixture and bake for 20 minutes.

9. Quiche Lorraine:

You Will Need:

  • 1 sheet of ready-rolled Shortcrust Pastry
  • 1 medium sized brown onion, finely chopped
  • 3 Bacon Slices, finely chopped
  • 3 Eggs
  • 300 ml of pouring cream
  • ½ cup of milk
  • ¾ cup of cheddar cheese

How To:

  1. Line the tart pans with pastry and bake for 10 minutes or until golden brown.
  1. Heat oil in a frying pan and cook bacon and onion until soft.
  1. Drain on absorbent paper and leave it to cool. Sprinkle the bacon mixture into the pastry case.
  1. Beat eggs in a medium sized bowl and then add in cream, cheese, and milk.
  1. Pour the egg mixture into the pastry case and bake for 35 minutes or until the filling is set.

10. Asparagus And Tomato Quiche:

You Will Need:

  • 1 large sheet of ready-rolled Shortcrust Pastry
  • 1 cup of asparagus cut into pieces
  • 1 cup of cherry tomato slices
  • 6 eggs
  • ¾ cup of shredded Parmesan cheese
  • ½ cup of milk
  • 1/3 cup of sour cream
  • ½ teaspoon of salt
  • ¼ teaspoon of white pepper

How To:

  1. Blanch the asparagus in boiling water for one minute. Drain and leave it aside.
  1. In a tart tin, sprinkle cheese evenly.
  1. Top it with tomatoes and asparagus in an even layer.
  1. Meanwhile, beat eggs, milk, sour cream, salt, and pepper. Carefully pour over the asparagus and tomato mix.
  1. Bake for 40 minutes or until an inserted toothpick comes out clean. Let it stand for 5 minutes before serving.

These mini quiche for toddlers will make a great evening snack. They won’t even know that you have sneaked in all the vegetables that they dislike. You can also replace the ingredients to suit your baby’s preference.
