The word ‘kheer’ originates from the Sanskrit word “Ksheera,” meaning milk. This traditional, yummy and aromatic dessert is also known as Payasam, Payesh, Khiri, Paays, Payos, Payasa, and Kiru in various parts of India.

  1. Pour the milk into a pot and heat it.
  2. Add the soaked rice and cook until the rice becomes soft.
  3. Add the condensed milk and cook for 7 minutes.
  4. Add the cardamom powder and mix well.
  5. Transfer it to a bowl.
  6. Top it with cashew nuts and raisins.

Ingredients
  • ½ cup soaked rice
  • 4 cups milk
  • ¾ cup powdered jaggery
  • ½ teaspoon cardamom powder
  • 2 tablespoons of ghee
  • Cashew nuts and raisins
  • Saffron strands
How To Prepare
  1. Bring the milk to a boil and add the rice. Cook until the rice is soft.
  2. In another pan, heat the ghee and sauté the cashew nuts.
  3. Add the cardamom powder and powdered jaggery to the rice and milk pot.
  4. Stir well and combine. Take it off the flame.
  5. Let it cool for about 10 minutes.

  1. Soak the saffron or kesar strands in the milk for 30 minutes.

  • Chopped almonds and pistachios
How To Prepare
  1. Bring the milk to a boil and add the cocoa powder and drinking chocolate to it.

  • A few strands of saffron

Ingredients
  • ½ cup Basmati rice
  • 1 liter milk
  • ½ cup sugar
  • 6 green cardamoms
  • 2 tablespoons of chopped almonds and pistachios
  • A pinch of saffron
  • A few drops of edible rose water
How to Prepare
  1. Soak the rice in water for 30 minutes.
  2. Drain the water completely and pat the grains dry.
  3. Add the rice to a food processor and blend it into a coarse powder.
  4. Heat the milk in a pot.
  5. Take a tablespoon of milk from the pot and toss it in a small bowl.
  6. Add the saffron strands, stir and keep it aside.
  7. Once the milk comes to a boil, add the ground rice.
  8. Keep stirring every 2 minutes to prevent lumps.
  9. While the rice is cooking, use a mortar and pestle to grind the cardamom pods coarsely.
  10. Add the cardamom and saffron milk and stir. Cook until the consistency is thick.
  11. Take the phirni off the flame and let it cool for 5 minutes.

  • ½ cup Basmati rice
  • 1 ½ liters milk
  • ¼ cup sugar
  • ¼ teaspoon cardamom
  • A pinch of nutmeg
  • ¼ cup water
  • Green apple slices
  • A pinch of cinnamon powder
  • Crushed almonds
How To Prepare
  1. Add milk, water, and sugar in the pressure cooker.
  2. Stir and let the mixture come to a boil.
  3. Add the cardamom, nutmeg, and rice. Close the lid, put it on high flame, and wait for it to whistle once.
  4. Simmer it down and cook for 10 minutes.
  5. Remove from the flame and let it cool down.
  6. Open the lid and let the kheer cool down a bit more.

Ingredients
  • 15 strawberries
  • ½ cup Basmati rice, soaked and ground
  • 1 liter milk
  • ¼ cup sugar
  • 3 green cardamom pods
  • Chopped almonds and pistachios
  • Silver warq for garnish
How To Prepare
  1. Pulse the strawberry in a food processor.
  2. Add the milk to a pot and bring it to a boil.
  3. In the meanwhile, add the strawberry to another pan. Add some sugar and stir and cook until the sugar is completely incorporated.
  4. Add this mixture to the milk.
  5. Add the rice and let it cook for 15-20 minutes over low flame.
  6. Crush the cardamom pods and add it to the pot.
  7. Stir and cook for 5 minutes.
  8. Take it off the heat and let it cool down for 10 minutes.
  9. Serve it in a bowl.
  10. Garnish with chopped almonds, pistachios, and silver warq.

12. Microwave Rice Kheer

Ingredients
  • ½ cup Basmati rice
  • 1 liter milk
  • 3 tablespoons sweetened condensed milk
  • 2 tablespoons sugar (if required)
  • 1 ½ teaspoons cornflour
  • ½ teaspoon cardamom powder
  • Cashew and raisins for garnish
How To Prepare
  1. Wash the rice and drain the water.
  2. Add the rice to a microwave safe bowl.
  3. Add water to it and microwave at high for 7-8 minutes.
  4. Take the bowl out and use the back of a spoon to mash the rice a little.
  5. Add the milk and microwave for 3 minutes.
  6. Add the condensed milk and sugar and microwave for 2 minutes.
  7. While that’s happening, mix the cornflour with 3 tablespoons of water and cardamom powder.
  8. Add it to the bowl and microwave for 3 minutes.
  9. Take it out and let it cool for 10 minutes.
  10. Garnish with cashew and raisins.
