You Will Need:

  • Chicken broth
  • Orzo
  • Skinless and boneless chicken breast (chopped)
  • Eggs
  • Lemon juice
  • Salt
  • Pepper Powder
  • Parsley (chopped)

How To:

  1. Boil the stock in a pot.
  2. Add orzo and reduce the heat. Let it simmer for ten minutes.
  3. Add the chicken and let it simmer for another ten minutes.
  4. Mix the eggs and the lemon juice in a bowl.
  5. Take out a little broth from the pot and pour it into the bowl. Whisk well.
  6. Pour the egg mix into the pot. Cook until the soup thickens. Add the salt and Pepper Powder as per taste. Garnish with parsley.

2. Sweet Potato And Yellow Split Pea Soup:

You Will Need:

  • Water
  • Sweet potatoes – peeled and cut into small cubes
  • Dried
  • Ginger (paste)
  • Onion (chopped)
  • Pumpkin seeds (toasted)

How To:

  1. Boil a little water in a pan over medium heat. Add the onions and cook until they turn translucent.
  2. Add and sauté the ginger. Add more water, sweet potato and the yellow split peas. Let it all come to a boil.
  3. Lower the heat and cover the pan. Let it simmer for an hour.
  4. Remove the cover and let it simmer for another ten minutes. Pour the soup in a food processor and make a puree. Sprinkle the pumpkin seeds for garnishing.

You Will Need:

  • Olive oil
  • Onion (chopped)
  • Celery stalks (chopped)
  • Garlic (paste)
  • Carrots (peeled and finely chopped)
  • Fresh thyme leaves
  • Bay leaf
  • Low sodium chicken stock
  • Noodles
  • Chicken (cooked)
  • Salt
  • Pepper Powder

How To:

  1. Heat oil in a pan. Add and sauté the onions, garlic, carrots, celery, bay leaf and thyme for about five minutes over medium heat.
  2. Add the stock and let it all come to a boil. Reduce the heat and let it simmer.
  3. Add the noodles and let them cook.
  4. Now, add the chicken. Season with salt and Pepper Powder as per taste.

4. Butternut Squash And Apple Soup:

You Will Need:

  • Butter
  • Onion (chopped)
  • Nutmeg (powder)
  • Cinnamon (powder)
  • Butternut squash – peeled, seeded and cut into small cubes
  • Apple (peeled and cubed)
  • Vegetable broth
  • Apple Cider Vinegar
  • Salt
  • Pepper Powder

How To:

  1. Melt the butter in a pan over medium heat. Add the onion, nutmeg and cinnamon powders. Sauté until the onion starts to turn brown.
  2. Add the butternut squash, apple, Apple Cider Vinegar and the broth. Let it all boil.
  3. Reduce the heat and let the soup simmer. Do not cover the pot. Let it all cook until the apple, and the butternut squash turn tender.
  4. Add the contents of the pan into a blender and churn to make a puree. Pour the puree back into the pan and add salt and Pepper Powder. Let it simmer for five minutes over medium heat.

5. Roasted Tomato And Garlic Soup With Grilled Cheese Croutons:

You Will Need:

  • Tomatoes
  • Garlic (peeled)
  • Olive oil
  • Sea salt
  • Pepper Powder
  • Butter
  • Sweet onion Chopped
  • Vegetable broth
  • Fresh rosemary
  • Spelt flour

For the Grilled Cheese Croutons:

  • Multi-grain bread
  • Cheddar cheese (grated)
  • Butter

How To:

  1. Preheat the oven to 400 degree F.
  2. Arrange the tomatoes and the garlic in a baking dish. Drizzle a little olive oil and sprinkle sea salt and Pepper Powder over them. Roast the tomatoes and garlic for about an hour.
  3. Remove the dish from the oven and keep it aside to cool.
  4. Add butter in a saucepan over medium heat. Add the onions and rosemary and sauté until the onions turn translucent. Add the broth and the tomato and garlic mixture. Cover the pan and let the ingredients simmer for about half an hour. Keep regularly stirring.
  5. Put the soup in a food processor and blend it to a puree. Put it back in the saucepan.
  6. In a different frying pan, melt the butter over low heat. Add the flour and whisk to avoid any lumps. Add this to the soup. Mix well and add salt and Pepper Powder. Let it simmer for some more time.
  7. Spread the butter on the bread slices and place the cheddar cheese on top. Close with the other slice. Grill this in a pan. Once the cheese melts and the slices turn golden brown, remove them from the pan and slice into small pieces. Add it to the soup while serving.

6. French Onion Soup:

You Will Need:

  • Yellow onions (peeled and sliced)
  • Butter
  • Garlic
  • Sugar
  • Fresh thyme (chopped)
  • Salt
  • Pepper Powder
  • All-purpose flour
  • Balsamic vinegar
  • Sodium-free chicken stock
  • Stick baguette
  • Gruyere cheese (grated)
  • Parmesan cheese (grated)

How To:

  1. Melt the butter in a pot over medium heat. Add the onion, garlic, sugar, thyme and salt and Pepper Powder. Stir it and let it cook over medium heat for about 20 minutes.
  2. Sprinkle flour over the onion mix. Add vinegar and a little stock. Stir and add the rest of the stock. Let it boil. Lower the heat and let it simmer for ten minutes.
  3. Cut the bread into slices and lay on the cookie sheet. Mix the two cheese together in a bowl. Spread it over each bread slice.
  4. Heat it in the oven until the cheese melts. Cut the bread into large cubes.
  5. Add the bread cubes in the soup before serving.

7. Curried Pumpkin Soup:

You Will Need:

  • Olive oil
  • Onion (diced)
  • Garlic (paste)
  • Cumin
  • Coriander powder
  • Curry powder
  • Salt
  • Pumpkin puree
  • Low-sodium vegetable or chicken stock
  • Water
  • Coconut milk

How To:

  1. Heat the olive oil in a pan over medium flame. Add the garlic and onions and cook until they soften. Add the remaining spices and stir well.
  2. Add the pumpkin puree into the pot and mix well. Add the stock, water and the coconut milk. Let the soup simmer for about 20 minutes.

  • Cannellini beans
  • Chickpeas

For the Crostini:

  • Baguette – cut into slices

How To:

  • Rice milk
  • Seasoning blend

  • Bacon or meat of choice (cooked crispy and crumbled)
  • Potatoes (unpeeled and diced)

  • Tomato sauce
  • Wheat ale
  • Chicken broth
