You Will Need:
- 5 cups of cooked rice
- ½ cup finely diced cooked chicken
- 8 prawns, finely diced

- 2 shallots, finely diced
- 1/3 cup peas, chopped
- 1 carrot, finely diced
- 2 tablespoons of light soy sauce
- 2 eggs, beaten
How To:
- Heat oil in a wok and when it starts sizzling, add corn kernels, shallots, cooked chicken, peas and prawns. Cook for 2 minutes.

- 1 cup bread crumbs
- 1 egg, lightly beaten
- 400 grams of salmon fillets
- Canola oil spray
- ½ cup of cooked corn kernels
- 1 ripe avocado
- ½ red capsicum, chopped
- ¼ cup cherry tomatoes, halved
- Zest of one lemon
- Juice of one lemon
- Salt to taste

How To:
- Cut salmon into 1-inch strips and leave it aside.
- In a shallow bowl, combine breadcrumbs with lemon zest and salt.

You Will Need:
- 1 ½ pound of boneless and skinless chicken breasts, cut into 6 fillets

- Kosher salt
- 4 cups of corn flakes
How To:
- Preheat the oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.

7. Sweet Pea Lasagna:
You Will Need:
- 1 10-ounce packet of frozen peas, thawed
- 1 16-ounce container of ricotta
- 1 9-ounce package of lasagna noodles
- 1 16-ounce jar of marinara sauce
- Kosher salt and black pepper to taste
- ¼ cup of shredded mozzarella
How To:
- In a medium sized bowl, combine peas, ricotta cheese and ¼ teaspoon of salt and pepper.
- Spoon half jar of marinara into a square baking dish. Top it with 4 sheets of lasagna.
- Spread half of the ricotta mixture over the lasagna sheet.
- Top with 2 sheets of lasagna. Spread the remaining ricotta cheese mixture over the lasagna sheet and top with 4 lasagna sheets and remaining marinara.
- Sprinkle mozzarella cheese on the top and bake for 50 minutes.
8. Pasta With Tomato Sauce:
You Will Need:
- 1 cup of cherry tomatoes
- ½ cup of parsley leaves
- ½ cup of fresh basil leaves
- ¼ cup of olive oil
- 1 teaspoon of salt
- ¼ teaspoon of coarsely ground black pepper
- 1 clove of garlic
- 1 packet of penne pasta
- 12 oz. of small mozzarella balls

- In a serving bowl, combine cherry tomatoes, basil, oil, salt, pepper, garlic and parsley. Leave it aside for 4 hours.

- 1 large sweet potato

- 4 large flour tortillas
- 6 oz. of Monterey Jack cheese
- 2 tablespoons of fresh lime juice

10. Chicken Nuggets:
You Will Need:
- 3 chicken breast fillets
- ½ cup of plain flour
- 2 eggs
- 1 cup of bread crumbs
- 1/3 cup of cornflake crumbs
- 1/3 cup of freshly grated Parmesan cheese
- ½ cup of mayonnaise
- 2 tablespoons of sweet chili sauce
How To:
- Slice the chicken breasts into bite-sized pieces. Coat it with flour and leave it aside.
- Whisk eggs in a small bowl.
- In another bowl, mix bread crumbs, Parmesan cheese and corn flakes crumb.
- Coat the chicken pieces with flour, dust and dip in the beaten egg and lastly in the crumb mix.
- Place the coated pieces on the baking tray and refrigerate for 30 minutes.
