You Will Need: 

  • Butter
  • Leek or spring onion
  • Roughly chopped carrots
  • Honey
  • Bay leaf
  • Vegetable stock
  • Yogurt (optional)

How To: 

  • Melt the butter in a pan and add the greens. Cook until it softens.
  • Now add carrots, honey and bay leaf and cook for four minutes.
  • Add the stock and let it boil. Let it simmer for another 30 minutes.
  • Garnish with a little yogurt and serve.

You Will Need: 

  • Diced red pumpkin
  • chopped onions
  • fresh cream
  • butter
  • salt
  • freshly ground black pepper
  • chopped spring onions

How To:

  • Melt the butter in a pan.
  • Add the onions and pumpkins one by one and sauté.
  • Add some water, salt and pepper and cook until the pumpkin softens.
  • Turn off the heat and let it cool.
  • Now blend the veggies to make a puree.
  • Transfer the puree to the pan, add cream and let it boil.
  • While serving, you can garnish with some fresh spring onions.

  • Butter
  • finely chopped onion
  • cauliflower
  • diced potato
  • vegetable stock
  • milk and cheese

How To:

  • Heat the butter in a pan, add onions and cook until transparent.
  • Add the cauliflower florets, potatoes, vegetable stock, milk and the cheese.
  • Let it boil first and then reduce the heat to let it simmer for 30 minutes.
  • Once cool, blend this in a mixer to get a creamy consistency.
  • You can add a little warm milk if the soup is too viscous.

4. Carrot And Beetroot Soup:

You Will Need:

Peeled and chopped carrots and beetroots.

How To: 

  • In a pressure cooker, add carrots, beetroot, and a cup of water.
  • Cook until five or six whistles.
  • Turn off the heat and let it cool.
  • Blend the cooked vegetables to a puree and strain it.
  • Now transfer this to the pan and bring to a boil.
  • Serve with your choice of garnish.

5. Chicken And Vegetable Soup:

You Will Need: 

  • Chicken legs de-skinned
  • water
  • chopped carrots
  • chopped onion
  • one bay leaf
  • diced celery
  • diced parsnip
  • diced potato
  • diced zucchini
  • soy sauce

How To: 

  • Put chicken, carrot, onion and bay leaf in a pan and add water. Let it all come to a boil.
  • Now cover and cook for another 20 minutes on low heat.
  • Make sure the chicken is tender. Remove the chicken and keep it aside.
  • Strain the stock and add it in the pan.
  • Add carrot, celery, potato, zucchini, and parsnip. Bring it to boil.
  • Reduce the heat and cook for another 30 minutes.
  • Mince the chicken and add it to the soup.
  • Garnish with a little bit of soy sauce.

6. Egg And Sweet Corn Soup:

You Will Need: 

  • Olive oil
  • crushed garlic
  • chopped onion
  • diced potatoes
  • chicken stock
  • sweet corn
  • salt
  • crushed black pepper
  • egg
  • grated cheese

How To: 

Heat the oil in a pan. Sauté garlic and add onions and potatoes. Now add chicken stock and sweet corn and bring it to a boil. Cover and let it simmer for 30 minutes. Turn off heat and blend after it cools. Add the puree in a pan and cook over medium heat. Add the seasoning. Now beat the egg and add it to the soup. Keep stirring. Garnish with cheese and serve.
