  1. Preheat the oven to 190’C
  2. Peel the sweet potatoes and chop.
  3. Add the potato pieces into a pan of boiling water.
  4. Take a large pan and heat some oil in it.
  5. Next, add chopped onions and carrots. Fry until the onions have become soft.
  6. Next, add the mince. Fry till it is brown in color.
  7. Cook on for about 10-12 minutes on medium heat.
  8. Add the peas and beans and cook for few more minutes. Don’t forget to stir occasionally.
  9. Your sweet potatoes should be done by now. Take them out of the pan and mash.
  10. Now, pour the mince into an oven safe dish and put the sweet potato mash on top.
  11. Now let it bake in the oven for around 40 minutes.

2. Sweet Potato And Pineapple Burger:

Ingredients:

  • 600g sweet potatoes
  • 2 tbsp olive oil
  • 1 onion
  • Two garlic cloves
  • One tsp Moroccan spice mix
  • Five pineapple rings
  • One tsp rose harissa
  • 100g breadcrumbs
  • 50g almonds
  • 100g pumpkin seeds
  • Gram flour
  • Bread rolls

How To Make:

  1. Preheat the oven to 220’C
  2. Cut the sweet potatoes in half and bake in for 30 minutes. Do not peel the potatoes.
  3. Once they are done, scoop out the flesh.
  4. Now, fry the onions until soft.
  5. Add the garlic, and Moroccan spice mix.
  6. Fry for another 30 seconds or so. Keep stirring continuously.
  7. Chop the pineapple rings into small cubes and put in a big bowl along with the cooked sweet potato flesh, fried onions, rose harissa, breadcrumbs, almonds and pumpkin seeds.
  8. Pat these contents into shape and make around eight thin burgers.
  9. Now roll them in gram flour. Make sure they are coated evenly from all sides.
  10. Shallow fry until the burgers are golden on each side.
  11. Now assemble the burgers and serve them warm!

3. Sausages With Roasted Sweet Potatoes:

  • 200g new potatoes
  • Two red onions
  • 3 tbsp olive oil
  • Four sprigs of rosemary
  • 8 sausages
  • 400g sweet potato
  • Black pepper

How To Make:

  1. Preheat the oven to 200’C
  2. Take a large baking tray and spread the new potatoes and onions.
  3. Drizzle some olive oil, add the sprigs of rosemary, and season with pepper.
  4. Now add sausage chunks and put the tray into the oven.
  5. After 10 minutes add the sweet potato and mix.
  6. Place the tray on the top shelf and roast for about 20 minutes.
