So, without further ado, let’s get started on some delicious but easy-to-make Thanksgiving recipes:
1. Kale Salad With Pickled Cranberries And Crispy Quinoa
What makes this salad so perfect is the sweet-tartness of the cranberry, coupled perfectly with the crunchiness of all that quinoa. It is tasty, healthy, and apt for Thanksgiving!
To make this one, you will first have to pickle the cranberries. Here’s how: First, boil sugar and vinegar together. To this mixture, add a few bitters of your choice and combine them with spices. Let the mixture simmer for a few minutes. Then, add the cranberries and let them simmer with the mix for a few minutes. Take it off the heat once it begins to burst. Transfer the contents to a jar or bowl and let them cool. Store it in a cool, dry place for a few days, and your pickled cranberries are ready!
To get the rest of the dish ready, you will need to boil the quinoa, drain the water, and leave it to dry. Then, fry it on a small skillet on medium heat until the quinoa is crispy. Make your salad dressing with lime juice, mustard, and honey by whisking them together in a bowl with a bit of olive oil. Add the required amount of salt and pepper. Take this mix and gently spread it generously on your kale. Toss in the quinoa and pickled cranberries. You can also add apples and top it off with cheese!
2. Grandma’s Famous Corn Pudding
One of the most homely recipes, Grandma’s famous corn pudding, is a traditional pudding recipe that is often a part of most Thanksgiving dinners. It is simple yet delicious! To make this, all you have to do is scrape the kernels of corn into a bowl and then add sugar, salt, eggs, flour, and milk. Whisk them together or use a blender and whip them gently. This has to go into a preheated oven of 350 degrees. Then, bake the mix (for about a little over an hour) until you notice a beautiful golden brown.
3. Lima Bean And Corn Succotash
Interestingly, the “succotash” is a dish that comes primarily from the Narragansett tribe, and it essentially means “stew with corn”. The popularity of this dish spread all across the United States. Now, it has become a Southern staple, particularly during Thanksgiving. To get cracking with this recipe, you need to boil lima beans in a large pot of boiling water. Add the required amount of salt and cook the beans well. Once done, add corn and continue cooking till the corn is tender. Drain out all the excess water. Add a good amount of cream and cook till the entire content has a thick and creamy consistency. Add butter, season with pepper, and your lima bean and corn succotash are ready!
4. Roasted Butternut Squash With Cider Vinaigrette
A lot of families have this humble recipe as a part of their more extensive spread during Thanksgiving. It’s healthy, delicious, and it’s probably the best butternut squash recipe that exists! Preheat your oven to 425 degrees before getting started. Meanwhile, cut up the butternut squash and onions, add a few drops of oil, some salt, and pepper, and put them in the oven for 20 minutes until it becomes the perfect golden brown. In a small saucepan, boil some cider for about 15 minutes and keep aside. Add vinegar, the reduced cider, mustard, oil, salt, and pepper in another bowl. Throw in some finely chopped parsley. Your vinaigrette is ready! Drizzle it over the roasted butternut squash and onions, and you’re done!
5. Cast-Iron Hasselback Potatoes
When Thanksgiving is around the corner, the glorious golden Hasselback potatoes must make an appearance! Preheat the oven to 425 degrees. Meanwhile, grease a 12-inch cast-iron pan with butter and arrange the potatoes as shown in the picture above. Brush the potatoes with some extra butter and sprinkle with salt. Add some spice rub to the potatoes, cover with an aluminum foil, and let the taters bake for 30 minutes.
