What makes this salad so perfect is the sweet-tartness of the cranberry, coupled perfectly with the crunchiness of all that quinoa. It is tasty, healthy, and apt for Thanksgiving!

To make this one, you will first have to pickle the cranberries. Here’s how: First, boil sugar and vinegar together. To this mixture, add a few bitters of your choice and combine them with spices. Let the mixture simmer for a few minutes. Then, add the cranberries and let them simmer with the mix for a few minutes. Take it off the heat once it begins to burst. Transfer the contents to a jar or bowl and let them cool. Store it in a cool, dry place for a few days, and your pickled cranberries are ready!

To get the rest of the dish ready, you will need to boil the quinoa, drain the water, and leave it to dry. Then, fry it on a small skillet on medium heat until the quinoa is crispy. Make your salad dressing with lime juice, mustard, and honey by whisking them together in a bowl with a bit of olive oil. Add the required amount of salt and pepper. Take this mix and gently spread it generously on your kale. Toss in the quinoa and pickled cranberries. You can also add apples and top it off with cheese!
