1. Christmas Tree Pops:

You Will Need:

  • 100 grams of butter
  • 100 grams of golden caster sugar
  • 1 teaspoon of vanilla extract
  • 2 medium eggs
  • 100 grams of flour
  • 3 tablespoons of cocoa powder
  • 3 tablespoons of milk
  • 300 grams of sifted icing sugar
  • Green food coloring
  • Sprinkles, mini Gems or Smarties for decorating

How To:

  1. In a mixing bowl, beat butter with sugar and vanilla extract until creamy.
  2. Crack the eggs, one at a time and beat again.
  3. In another bowl, sift flour and cocoa together.
  4. Add some milk to the egg mix and stir well.
  5. Spoon the mixture into a cake tin and bake for 20 minutes. Leave it aside to cool.
  6. When the cake has cooled, use a serrated knife to cut into 8 wedges.
  7. Insert a lollipop stick through each cake wedge.
  8. Meanwhile, mix food coloring with icing sugar.
  9. Spoon the icing over the cake wedges, until covered completely.
  10. Decorate with mini Gems or Smarties and freeze for 2 hours before serving.

2. Melting Snowman Cookies:

You Will Need:

  • 200 grams of fondant icing sugar
  • 6 white marshmallows
  • 6 large cookies
  • Mini chocolate beans
  • 6 pretzel sticks
  • 1 tube of black writing icing

How To:

  1. Mix icing sugar with a few drops of cold water and whisk until the mixture is thick in consistency.
  2. Cut the marshmallows in half using scissors.
  3. Spoon the icing onto each cookie and attach half a marshmallow.
  4. Then drizzle a little more icing onto the cookie to give an appearance of melting snow.
  5. Break the pretzel sticks in half and place on the cookie to give an appearance of the snowman’s arms.
  6. Use three chocolate beans to make buttons.
  7. Use the icing pipe to make eyes and mouth. Leave to set for an hour before serving.

3. Rudolph Cupcakes:

You Will Need:

  • 200 grams of cubed butter
  • 200 grams of plain chocolate, chopped
  • 200 grams of soft brown sugar
  • 2 large eggs, beaten
  • 1 teaspoon vanilla extract
  • 250 grams of self- flour

For The Icing:

  • 200 grams of plain chocolate, chopped
  • 100ml of double cream
  • 50 grams of icing sugar

For The Decoration:

  • Milk chocolate buttons
  • White chocolate buttons
  • Red Smarties
  • Black icing pens
  • Pretzels, cut in half

How To:

  1. Line a muffin tin with paper cases.
  2. In a large saucepan, melt butter, sugar, chocolate and add water, stirring occasionally. Set aside to cool.
  3. Stir vanilla essence and eggs into the chocolate mixture.
  4. In a large bowl, mix the flour and chocolate mixture until smooth.
  5. Spoon the cake mixture into the cases, three quarters full. Bake for 20 minutes.
  6. For the icing, melt the chocolate and stir in the double cream and icing sugar in it. Top each cake with icing.
  7. Place a milk chocolate button on top of each cupcake.
  8. Position two white chocolates just above the chocolate button.
  9. Stick a red Smartie onto the chocolate button for a nose.
  10. Use icing pen to draw black dots for the eyes.
  11. Stick two half pretzels on top of each cake for the antlers and one under the Smartie for the mouth.

4. Chocolate Log:

You Will Need:

For The Cake:

  • 3 eggs
  • 85 grams of caster sugar
  • 85 grams of plain flour
  • 2 tablespoons of cocoa powder
  • ½ teaspoon of baking powder

For The Filling And Icing:

  • 50 grams of butter
  • 140 grams of dark chocolate
  • 1 tablespoon of golden syrup
  • 280ml of double cream
  • 200 grams of sifted icing sugar
  • 2-3 leaves of mint, crushed
  • Icing sugar and holly sprigs to decorate

How To:

  1. Line a Swiss roll tin with baking parchment and leave it aside.
  2. Beat sugar and eggs with a beater for 8 minutes or until creamy.
  3. In another bowl, mix flour, baking powder, and cocoa. Add to the egg mixture.
  4. Fold the mixture carefully and pour into the tin. Tip the tin from side-to-side and bake for 10 minutes.
  5. When the cake is ready, peel off the lining paper to roll it up from the edge. Leave it aside to cool.
  6. For the icing, melt chocolate and butter together.
  7. Remove from the heat and stir in the syrup and five tablespoons cream.
  8. Add the icing sugar and whisk until smooth.
  9. Stir in the remaining cream until it holds its shape.
  10. Unravel the cake and spread the cream over it.
  11. Scatter over the crushed mints and carefully roll up the log again.
  12. Cut a diagonal slice from one end of the log and branch.
  13. Use a fork to give the effect of tree bark.
  14. Sprinkle icing sugar and decorate with holly.

5. Gingerbread Men:

You Will Need:

  • 140 grams of unsalted butter
  • 100 grams of muscovado sugar
  • 3 tablespoons of golden syrup
  • 350 grams of flour
  • 1 teaspoon of soda bicarbonate
  • 2 teaspoons of ground ginger
  • 1 teaspoon of ground cinnamon
  • A pinch of cayenne pepper

For The Decoration:

  • 50 grams of icing sugar
  • Water

How To:

  1. In a pan, melt butter, sugar, and syrup.
  2. In a mixing bowl, add flour, soda, salt, and spices.
  3. Then stir in the butter mix and chopped ginger.
  4. Knead to make dough
  5. Roll out the dough to 5mm thickness and stamp out the gingerbread men.
  6. Bake the men for 12 minutes or until golden. Let it cool for 10 minutes.
  7. To decorate, mix icing sugar with a few drops of water until thick and smooth.
  8. Spoon the icing into a piping bag and make buttons, eyes and mouth of the gingerbread men.

6. Snowball Truffles:

You Will Need:

  • 200ml of double cream
  • 200 grams of dark chocolate
  • 200 grams of desiccated coconut

How To:

  1. In a large bowl, chop the chocolate pieces.
  2. In a saucepan, boil the double cream and add the chocolate pieces.
  3. Stir until it is smooth.
  4. Let the mixture cool in the refrigerator for 2 hours.
  5. Roll into small walnut sized balls from the chocolate mixture.
  6. Transfer the coconut onto a plate.
  7. Roll the truffle in the coconut until evenly covered.
  8. Freeze for 1 hour before serving.

7. Gingerbread House:

You Will Need:

  • 200 grams of butter
  • 1 cup of brown sugar
  • 1 tablespoon of ground ginger
  • 2 teaspoons of ground cinnamon
  • 1 cup of plain flour
  • 3 ½ cups of self-rising flour
  • 2 eggs, beaten
  • ½ cup of golden syrup
  • 2 quantities of Royal Icing
  • Confectionery for decorating.
  • Templates
  • 2 x 18cm by 10 cm for front and back
  • 2 x 13cm by 22cm templates for the ends
  • 2 x 15cm by 18cm for the roof pieces

How To:

  1. Beat butter and sugar until combined. Add cinnamon, ginger, flours and beat again.
  2. In another bowl, mix the eggs with the golden syrup.
  3. Knead the mixture until smooth.
  4. Divide into four pieces and shape into flat discs. Wrap the mixture in a cling film and refrigerate for an hour.
  5. Remove from the refrigerator and knead again.
  6. Roll out to 5mm thickness and cut into the template shapes.
  7. Bake all the pieces for 15-20 minutes at 180 degrees. Leave it to cool overnight.
  8. When done, prepare the royal icing.
  9. Cut the windows and doors from the front, back pieces, and cut the slope for the roof from the end pieces.
  10. Take a brown paper and spread royal icing over it. Stick the paper on the back of the two roof pieces so that they join. Leave it to dry for 1 hour.
  11. Then glue the walls together using the royal icing.
  12. Lastly, place the roof on and pipe the royal icing on the roof to give an appearance of snow.
  13. Leave it to dry for 1 hour.

8. Ham Pie:

You Will Need:

  • 4 eggs, lightly beaten
  • 1 ½ cups of milk
  • 1/3 cup of self-rising flour
  • ¼ cup of grated carrot
  • ¼ cup of grated zucchini
  • 125 grams of ham, chopped
  • ½ cup of frozen corn
  • 1 ½ cups of grated cheese
  • 1 small onion, finely chopped
  • 1 tablespoon of grated Parmesan cheese

How To:

  1. In a mixing bowl, whisk eggs, and milk. Add flour and mix again.
  2. Then add carrot, zucchini, ham, corn, cheese, onion and mix well.
  3. Spoon the mixture into mini pie tins.
  4. Sprinkle Parmesan cheese and bake for 20 minutes or until the pies are golden brown in color.

9. Candy Cane Cupcakes:

You Will Need:

  • ½ cup of butter
  • 1 teaspoon of vanilla extract
  • ¾ cup of caster sugar
  • 2 eggs
  • 2 cups of self-rising flour
  • 1 cup of milk
  • Cream Cheese Icing
  • 250 grams of softened Philadelphia cream cheese
  • ½ cup of caster sugar
  • 2 teaspoon vanilla essence
  • 4 teaspoons of double cream
  • Mini candy canes

How To:

  1. Using an electric mixture, beat vanilla, sugar and cream together.
  2. Then add eggs, one at a time and beat again.
  3. Add half of flour and milk and beat again.
  4. Spoon the mixture into the cupcake tins and bake for 10 to 15 minutes.
  5. To make the icing, mix cheese, vanilla and sugar with an electric beater. Stir in the cream and mix well.
  6. Transfer into a piping bag and pipe onto the cupcakes.
  7. Top with mini candy canes and serve.

10. Chocolate Mint Bark:

You Will Need:

  • 125 grams of peppermint candy canes, crushed
  • 450 grams of melted white chocolate
  • 2/3 cup of thickened cream
  • 250 grams of melted dark chocolate
  • ½ teaspoon of peppermint extract

How To:

  1. Line a baking sheet with parchment paper.
  2. Spread half of the melted white chocolate over a baking sheet and sprinkle two tablespoons of crushed candy canes over it. Refrigerate for 30 minutes.
  3. Spread the melted dark chocolate over the white chocolate and refrigerate until firm.
  4. Spread the melted white chocolate over the dark chocolate layer and spread the remaining crushed peppermints over it. Refrigerate for 25 minutes or until firm.
  5. Remove the chocolate bark from the parchment paper and cut into bite size pieces.

11. Jam Stars:

You Will Need:

  • 200 grams of softened butter
  • ½ cup of icing sugar mixture
  • 1/3 cup of honey
  • 2 cups of sifted plain flour
  • ¼ cup of sifted self-rising flour
  • ¼ teaspoon of ground cinnamon
  • 230 grams of strawberry jam
  • Icing sugar, for decoration

How To:

  1. Beat butter and icing sugar using an electric beater. Add honey and beat again.
  2. In another bowl, combine cinnamon, flours and mixture.
  3. Add butter mixture to it and knead gently.
  4. Divide the dough in half and wrap each in a plastic wrap. Refrigerate for 15 minutes.
  5. Roll one portion of the dough until 5 mm thick.
  6. Using an 8 cm star cutter, cut out biscuits from one dough portion.
  7. Bake the biscuits for 10 to 12 minutes until golden in color.
  8. Use the star cutter and cut out biscuits from the remaining dough.
  9. Use a 4.5 cm star cutter and cut small stars out of the center of each uncooked star. Bake for 10 to 12 minutes.
  10. Meanwhile, heat the jam over low heat for 2 to 3 minutes.
  11. Place a teaspoon of jam in the center of the whole star biscuit and spread it slightly.
  12. Sandwich with the remaining star biscuit. Let it set for 30 minutes. Sprinkle with icing sugar and serve.

12. Almond Puffs:

You Will Need:

  • 140 grams of blanched and toasted almonds
  • 115 grams of unsalted butter
  • 2 tablespoons caster sugar
  • ½ teaspoon vanilla essence
  • 140g (1 ¼ cups) sifted flour
  • 2 tablespoons icing sugar

How To:

  1. Grind the almonds finely.
  2. In a bowl, beat butter and sugar together until pale and creamy.
  3. Then add ground almonds, vanilla essence and the sifted flour to it. Mix to form a dough.
  4. Roll the dough into small sized balls. Bake the balls for 35 minutes.
  5. Remove from the oven and sift icing sugar over it.
  6. Bake for another 2 minutes and serve.

13. Chocolate Christmas Cookies:

You Will Need:

  • 250 grams of softened butter
  • ¾ cup of caster sugar
  • 1 teaspoon of vanilla bean paste
  • 2 cups of plain flour
  • 1/3 cup of Dutch cocoa powder
  • 1 teaspoon of baking powder
  • ½ teaspoon of soda bicarbonate
  • 12 small peppermint candy canes, coarsely chopped
  • Chocolate Icing
  • 1 ½ cups of icing sugar mixture
  • ¼ cup of Dutch cocoa powder
  • ¼ cup of boiling water

How To:

  1. Beat sugar, vanilla, and butter until pale and creamy.
  2. Add cocoa powder, flour, baking powder, soda bicarbonate, and stir until combined.
  3. Roll the mixture into balls and flatten gently.
  4. Bake in a preheated oven for 15 minutes. Leave it aside to cool.
  5. To make the icing, combine cocoa and icing sugar in a bowl and add water to it. Stir to make a smooth paste.
  6. Spread the icing over the cookies and sprinkle with chopped candy canes.
  7. Set for 30 minutes before serving.

14. Chocolate Angel Cake:

You Will Need:

  • 125 grams of plain flour
  • 30 grams of cocoa powder
  • 7 egg whites, beaten
  • 1 teaspoon cream of tartar
  • 185 grams of caster sugar
  • 1 teaspoon of vanilla extract
  • 1 cup of chocolate icing

How To:

  1. Sift flour and cocoa into a bowl.
  2. In another bowl, beat egg whites and caster sugar until stiff.
  3. Then fold in the remaining caster sugar, vanilla extract, flour and cocoa powder.
  4. Grease the pan with butter and pour the mixture into the pan. Bake for 20 minutes.
  5. Sprinkle the top of the cake with chocolate icing, allowing it to drip down the sides.

15. Honey-Caramel Popcorn:

You Will Need:

  • 2 tablespoons of vegetable oil
  • 1/3 cup of popping corn
  • 1/3 cup of honey
  • 2/3 cup of caster sugar
  • 60 grams of butter

How To:

  1. In a saucepan, heat oil over medium flame and add 2 pieces of corn.
  2. When one of the pieces forms a circle, add the remaining corn.
  3. Cover with a tight fitting lid and let the corn pop.
  4. Remove the saucepan from the heat when the corn stops popping.
  5. Transfer to a bowl and leave it aside.
  6. In another saucepan, cook honey, sugar, and butter. Cook for 6 to 7 minutes.
  7. Bring to boil and simmer for another 7 minutes.
  8. Pour the caramel mixture over the popcorn and stir to combine.
  9. Set it aside to cool completely before serving.
