What You Need For The Cake

  • 2 large eggs
  • 2 cups all-purpose flour
  • 3⁄4 cup cocoa powder (unsweetened)
  • 1 cup vegetable oil
  • 1 tbsp. salt
  • 1 tbsp. baking powder
  • 1 cup of hot coffee
  • 2 cups sugar
  • 2 tbsps. baking soda
  • 1 cup milk
  • 1 tbsp. vanilla

  • 1⁄2 cup softened butter
  • 1⁄2 cup shortening or butter
  • 5 tbsp. all-purpose flour
  • 1 cup milk
  • 1 cup sugar
  • 1 tbsp. vanilla essence

  • Before you get your hands messy, preheat the oven to 325°F. Doing this before you start putting all the ingredients together will save you some time.
  • In a bowl, mix together the flour, baking powder, salt, and sugar. Use a sieve to sift this mixture.
  • To this mixture, add vegetable oil, coffee, and milk. It is important to ensure that the consistency of the batter isn’t too watery. Blend the mixture at a medium speed for about 2 minutes.
  • Once the mixture begins to resemble a huge blob of dough, add the eggs and vanilla essence to it. Beat this mixture until the batter attains a thin consistency.
  • Set the mixture aside for 2 minutes (this helps the cake mixture to set) before it is poured into the pan. To avoid the cake batter from sticking to the bottom of the pan, grease the pan with butter and dust some flour over it. You can use 9″x13” pans or the 2”– 9” round pans, whatever suits you the best. However, note that baking takes about 45 minutes in the 9″x13” pan, and about half an hour in the smaller pans.
  • After the oven dings, cool the pans for about 15 minutes. It is important to bring the cake to room temperature before it is refrigerated or demolded; else it may fall apart or become too rigid.

  • This flour mixture is the base for the sweetness, which comes from a good mix of butter, some shortening, sugar, and vanilla. Beat these remaining ingredients thoroughly until it gains a velvety and buttery texture. To this, add the flour and milk mixture. Now, all that’s left to do is—fill the piping cone or dip the spatula in this cream, get creative, and frost your way through the cake. If you’re feeling a little generous, embellish the icing on your cake with some chocolate sprinkles.

Bonus Tip: Refrigerate or freeze the icing for a couple of minutes before the final step.
